Khao Soi (thai coconut noodle soup
Khao soi is a Chin Haw cuisine that is popular in Laos and northern Thailand. The name translates to ‘cut rice,’ however it is probable that it is of the Burmese term for noodles “khao swè” which might explain the variances. The huge sheet noodle is rolled and sliced with scissors after being steamed. Traditional lao khao soi is cooked with hand-sliced rice noodles in a clear soup broth and topped with minced pork and tomato sauce. Vendors still manually cut the noodles in several marketplaces in Luang Namtha and Muang Sing. These traditionally sliced noodles are also available in numerous locations around northern Thailand.

You’ll learn how to prepare the curry paste from scratch and how to balance the flavors to achieve the perfect taste profile.
Khao Soi is typically served with egg noodles that are made fresh in-house. Our classes will cover the techniques of making the perfect egg noodles, from kneading the dough to rolling and cutting the noodles. You’ll learn how to achieve the right texture and thickness for the noodles, and how to cook them to perfection.
Our experienced chefs will guide you through the traditional cooking techniques used in making Khao Soi. You’ll learn how to properly sauté the curry paste, marinate the meat, and simmer the broth to infuse the flavors. You’ll also learn how to add the coconut milk, stock, and other ingredients to create a rich and flavorful broth that forms the base of the soup.
